Tomato, chickpea & Sweet Potato Stew

This is an uber-satisfying, hearty and rich tomato-y soup which is just perfect for those chilly nights when the summer weather is still indecisive. I adore the killer combo and nutritional bomb of tomatoes, chickpeas and sweet potatoes. For me, it’s the definition of comfort food. This is actually a retake on another item of Organic Avenue’s menu I just had to recreate at home. Although they don’t add sweet potato to their version, I think it makes it extra yummy. From one bowl alone you get a load of much needed fiber and protein, while the tomato broth balances out the flavor. To top it off, I added some white wine…. AMAZING nonetheless. Need I say more?

Recipe:

1 tbsp extra-virgin olive oil
4 cloves garlic, minced
1 large sweet onion, chopped
2 bell peppers, diced
1 cup cooked chickpeas or 1 can (BPA free)
5 large tomatoes, skin peeled
1 medium sweet potato, peeled and diced
3 cups vegetable broth
1 cup dry white wine
3 tbsp tomato paste
1 bay leaf
2 tbsp dried or fresh thyme
2 tbsp toasted and ground cumin
1 tbsp fine sea salt

Crusty bread, for serving.

Directions:
1. In a large pot, heat the olive oil over medium-high heat. Add the onion and saute for a few minutes, until caramelized.
2. Add garlic to pot until fragrant and add vegetable stock.
3. Add all additional ingredients and bring to a boil.
4. Cover, reduce heat and simmer for about 45 minutes or until the sweet potato is tender.
5. Taste and adjust seasoning if needed.

Serve by itself or with a slice or two of your favorite crusty bread. I ran out of avocado today but I’m certain it’s also an amazing combo. After the soup is done, sometimes I like to let it simmer and reduce a bit more, so I get an extra thick stew that I later serve over jasmine rice. Super healthy & delicious meal for any day of the week.
